6. Baked Salmon with Lemon and Herbs
What you need:
6 oz salmon filet per person
Tbsp finely chopped shallot
2 tbsp parsley chopped
2 tbsp basil chopped
Tsp dried dill
Lemon zest
Tbsp olive oil

To make:
Remove the salmon from the refrigerator 30 minutes before starting. Preheat the oven to 250 degrees and place a small pan of water on the bottom rack. Prepare the herb paste by chopping the parsley, shallot, basil, and the other herbs.
Zest a lemon and mix everything in a bowl. Moisten with olive oil to form a rough paste. Coat the salmon with the herb paste, forming a thick layer. Place the salmon skin-side down on the baking rack. Bake for about 20 minutes. It is done when it flakes easily with a fork. Remove from the oven and place on a cutting board. Remove the skin if desired. Sprinkle the salmon with a bit of sea salt and then serve.
