2. Salted Caramel and Coconut No-Bake Macaroons
The perfect crowd pleaser for your new party or book club meeting. These salty-sweet delights are a win with everyone, even the kids.
INGREDIENTS
6-tablespoons grass-fed butter.
3-tablespoons raw full-cream milk.
11-oz. Kraft caramels.
4-cups shredded organic coconut.
4-oz. Dark chocolate for melting.
Cracked Himalayan pink salt.
METHOD
Place a saucepan over medium heat and add the caramels, butter, and milk. Stir as the mixture melts together. When melted and mixed, add 3-cups of the coconut and stir till blended evenly, make sure that it doesn’t boil.
Scoop out tablespoons of the mixture onto wax paper and allow to cool. In a separate small bowl, melt the chocolate using the double-boil method. Dip the bottom of the cooled macaroon into the chocolate and return to the wax paper to set. Dust the macarons with the rest of the coconut. Store in an air-tight container in the fridge and eat within 3-days.
