4 Rich and Sweet Pad Thai
That simple pad thai does the job nicely, but it does leave out a couple of classic ingredients and is slightly less exciting for it.
That’s why we prefer this more interesting recipe, once you have the hang of putting it together. This recipe includes a combination of both rich and sweet ingredients, designed to offer the perfect combination of spice, sweetness, crunch, and salt.
And the key ingredient here that was missing from the last one? Of course, it is the peanuts!
Here’s the ingredient list:
14 ounces of rice noodles
2 tablespoons of fish sauce
4.5 tablespoons of tamarind paste
2 tablespoons of palm sugar
1.4tsp of lime juice
1.5tsp of rice vinegar
2tbsp of vegetable oil
1tbsp of minced garlic
1 large egg
4 ounces of large shrimp
1tsp of paprika
Green onion pieces
2tbsp of unsalted roasted peanuts
1 cups of bean sprouts
1 lime
The method is very similar to the last pad thai we looked at. You’re going to start by heating a large pot of water then cook the rice noodles quickly. Drain them and then meanwhile whisk the sauce ingredients together. Then heat a wok with some oil and cook the garlic, egg, and shrimp. Once that shrimp starts turning pink and the eggs have scrambled, you’ll throw them in the noodles. Add the remaining ingredients and spices, and then allow the noodles to turn red. Serve with bean sprouts, peanuts, and lime wedges.
