One of the most important things you can do in order to ensure that your chicken comes out juicy and flavorsome is to cover it with some foil. This way, you will prevent it from drying out completely or burning, and you’ll be able to trap in the flavor. This is especially true if you have also used some seasoning in order to give it extra taste.
That said, you also don’t want to keep the chicken covered the entire time, as this can actually go the other way and cause it to become soggy and wet and to lack the delicious crispy bits that we all love.
The best strategy then is to put your chicken in the oven on a relatively lower heat (say 200) and then to increase the heat just before the end and remove the cover. This will crisp up the edges nicely, especially if you have applied the oil liberally.
