2. Sweet Potato Lasagna
What you need:
Tbsp of olive oil
2 sweet potatoes, sliced
1 and a half pounds of ground pork
An egg
2 cups of cottage cheese
2 and a half cups of tomato sauce
8 cremini mushrooms, cut
A cup of diced onions
2 cloves of minced garlic
⅓ of a cup of chopped parsley
Salt and pepper
Tsp of oregano
Tsp of thyme
8 ounces of mozzarella, shredded
To make:
Preheat your oven to 375 degrees. Slice the sweet potatoes thin, make sure they are uniform so they cook evenly. In a bowl, mix the cottage cheese, egg, and parsley. Set aside. Heat olive oil in a skillet. Add in the pork, oregano, thyme, salt, and pepper. Cook until brown. Remove from pan and set aside. Add the onion and cook until tender. Add in the mushrooms and cook until tender. Add in garlic. Return the pork to the pan and add in the tomato sauce. Stir to combine. In a casserole dish layer the sweet potato slices, then the meat sauce, then the cottage cheese mixture. Repeat layers and then top with mozzarella. Cover with foil and bake for 30 to 40 minutes.
