5. Protein Cookies
What you need:
- 1 cup plus a half cup of white beans
- ½ cup of sunflower seed butter
- ¼ tsp of pink salt
- ½ tsp of baking powder
- ½ cup of coconut sugar
- ¼ cup of brewed coffee
- A tsp of vanilla
- ½ cup of chocolate chunks
To make:
Preheat your oven to 350 degrees Fahrenheit. Prepare a baking sheet by lining it with parchment paper. In a food processor, combine the sunflower seed butter, the beans, salt, and baking powder. Blend until it is smooth. Dissolve the coconut sugar in the coffee and then add this mix to the food processor. Add in the vanilla and mix until well combined. Pour in the chocolate chips and then pulse until everything is mixed together. Use a scoop to scoop the dough onto the baking sheet. Bake for 20 minutes. The center should be soft and the outside of the cookie should be crispy.
