2. Smothered Burritos
Enchiladas are almost as good as burritos. Blend the best of both meals with this outstanding recipe for smothered burritos – spicy and delicious!
INGREDIENTS
1-lb. Ground grass-fed beef.
4-flour tortillas – warmed.
1-can green enchilada sauce.
1-½-cups shredded cheddar cheese – divided.
¾-cup salsa.
METHOD
Preheat the oven to 375F. Take a small mixing bowl and add the salsa verde and enchilada sauce – whisk to combine.
Place a cast-iron skillet over medium-high heat and add the oil. When hot, add the beef and cook for 5-minutes until no longer pink. Break up the meat as you cook, and then drain the skillet. Stir in a ¼ of the sauce mixture and let flavors infuse for 1-minute.
Remove the skillet from the heat and spoon the beef into the center of the tortilla. Top with 3-tablespoons of shredded cheddar cheese and fold up the tortilla into a burrito. Place the burritos in a baking tray, smoother with the rest of the sauce, and top with the rest of the shredded cheese. Bake in the oven for 10 to 15-minutes until the cheese bubbles and turns golden brown.
