4. Cabbage Soup
What you need:
A tbsp of olive oil
Salt
½ pound of potatoes with the skin on, cut into quarter inch pieces
4 garlic cloves chopped
½ of a large yellow onion, sliced thinly
5 cups of stock
1 and a half cups of white beans, drained and rinsed
½ cup of medium cabbage, sliced into quarter inch ribbons
½ cup of parmesan cheese
To make:
Warm up the olive oil in a large pot over medium heat. Stir in the potatoes and the salt. Cover and cook until potatoes are somewhat tender and beginning to brown a bit. Add in the garlic and the onion and cook for another couple of minutes. Add in th beans and stock and bring to a simmer. Add in the cabbage and cook for several more minutes or until the cabbage starts to soften. Add salt as needed. Serve with some olive oil and some cheese.
