4. Parmesan Tuna Melts
We’ve already covered the classic tuna melt, but this recipe is a gourmet upgrade for anyone that enjoys this meal.
INGREDIENTS
2-cans Albacore tuna – drained.
4-Tablespoons full-fat mayonnaise.
2-tablespoons pickle relish.
1-teaspoon lemon juice.
½-cup Parmesan cheese – grated.
6-slices whole-wheat bread.
1-teaspoon garlic salt.
2-tomatoes – sliced.
1-cup mozzarella cheese – grated.
METHOD
Preheat the broiler to medium-high heat. In a medium mixing bowl, add the tuna, along with the lemon juice, relish, mayo, Parmesan cheese, and the garlic salt – whisk to combine.
Place the bread on a baking tray lined with aluminum foil. Spoon the tuna mix on top of three slices of bread and top with sliced tomatoes and mozzarella cheese – leave the other three pieces on the side for later.
Grill in the oven for 3-minutes until the mozzarella begins to melt. Remove from the oven and top the sandwiches with the extra three slices of bread. Place the tray back in the oven and broil for another 3-minutes until it starts to brown and crisp.
