3. Mornay sauce
This classic sauce is full of flavor and the cheese gives it a nice texture.
Ingredients
- Butter
- All-purpose flour
- Whole milk
- Whole cloves
- Onion
- Bay leaf
- Gruyere cheese
- Parmesan cheese
Directions
- In a saucepan, melt the butter.
- Add the flour and stir to create roux.
- Cook the roux for several minutes until the liquid has cooked out. This will help remove the taste of the raw flour.
- Add the warm milk and whisk to blend the liquid into the roux. Mix until there are no lumps.
- Add the onion, cloves, and bay leaf to the liquid and cook for several more minutes.
- Strain the liquid into a bowl and remove the cloves, bay leaf, and onion.
- Add the sauce back to the pan and add both cheeses.
- Stir until creamy.
- Remove the mixture from the heat and add some butter until the mixture becomes a smooth and silky sauce.
- Serve immediately.
