4. Glorious Gravy
Imagine Thanksgiving turkey dinner without the gravy. The chances are it’s a dry affair that’s screaming for some additional moisture. The creamy-gravy makes the meal, so you had better take care in preparing this critical side dish. We recommend you add flour to the recipe to thicken things up and don’t forget to include the turkey drippings!
INGREDIENTS
3-tablespoons all-purpose flour.
3-tablespoons butter.
1-cup turkey drippings.
2-cups chicken broth.
Cracked black pepper and crushed Himalayan pink salt.
1-teaspoon minced sage.
1-teaspoon minced thyme.
METHOD
Place a small saucepan over medium heat. Add the butter and let it melt. Whisk in the flour and cook until it turns a golden color. Whisk in the turkey drippings and the broth. Bring to the boil and then reduce the heat. Let the gravy simmer until thickened slightly.
Stir in the herbs and keep whisking to prevent the gravy from sticking to the bottom of the saucepan. When you achieve the right consistency, pull from the heat and empty into a gravy pourer.
