3. Turkey Leftover Soup
This recipe has to be the easiest way to get rid of all your leftovers – and it tastes fantastic as well. Our soup recipe combines everything left in the fridge in one pot. Cook up a batch of this soup and eat it for lunch – You’ll have enough to last the whole week!
INGREDIENTS
2-cups shredded turkey leftovers.
6-slices honey smoked back bacon, chopped.
1-cup jasmine rice.
1-onion, chopped
2-cloves minced garlic.
1-carrot, peeled and chopped.
1-red bell pepper, chopped.
4-cups chicken broth.
½-cup dry white wine.
¼-cup parsley, chopped.
Crushed Himalayan pink salt and cracked black pepper.
METHOD
Place a large crockpot over medium heat. Add the bacon and oil and cook till crispy. Reserve the fat in the pot and remove the bacon. Add the onions, bell pepper, carrots, and garlic to the crockpot and let cook in the bacon fat for 7-minutes until soft.
Add the broth, white wine, and rice to the pot, bringing to the boil. Reduce heat and let simmer for 20-minutes. When the rice is tender, stir in the turkey with the parsley and warm through. Serve with crispy diced bacon on top.
