4. Don’t Overstuff
One of the biggest mistakes newbies make in preparing their quesadillas is using too much filling. In this case, less is more. Quesadillas are meant to be a light snack or lunch – not a heavy meal. However, we’re making quesadillas here – So, make sure you pack a thin layer of filling into the tortilla to prevent it from leaking out into the pan during cooking. Over-stuffed quesadillas are soggy and take longer to cook in the skillet. Over-cooking your quesadillas will burn the tortilla, and your ingredients might not heat through in time, resulting in half-melted cheese and cold refried beans.
As a guideline, only use around 2-tablespoons of filling per quesadilla, and you won’t have to worry about a mess in the pan.
