3. Instant Pot Asian Chicken Lettuce Wraps

INGREDIENTS
2-lbs. Ground chicken.
3-cloves minced garlic.
1-red bell pepper, cored and julienned.
½-cup yellow onion – chopped.
½-cup hoisin sauce.
2-tablespoons soy sauce.
8-oz. Can chestnuts – drained and rinsed.
1-½-cups cooked brown rice.
3-green onions – sliced.
1-tablespoons rice vinegar.
1-tablespoons sesame oil.
2-heads iceberg lettuce.
Salt and freshly ground black pepper
METHOD
Add the chicken to a microwavable bowl, along with the garlic. Microwave for 5-minutes until the meat is no longer pink. Drain and pour the chicken into the Instant Pot. Add the onion, bell pepper, soy sauce and hoisin, and season with salt and pepper. Add the veggies to the Instant Pot, close the pot and seal the steam valve. Click the “manual” button, and set the timer for 5-minutes.
Remove the lid of the pot and release the steam. Stir in the rice, chestnuts, green onions, sesame oil, rice vinegar. Set the Instant Pot to “sauté,” and cook with the lid off for three minutes. Separate the lettuce, wrap the mixture with the leaves, and secure using a toothpick. Serve with your choice of sides.
